Springtime Cake

It's pretty obvious I'm itching for spring... I have flowery candles burning, I'm using tropical body scrubs, and I'm loving everything in the pastel colour palette.

My phone camera made the pink much darker... but it looks so pretty against the sprinkles. 

That includes cake! After deciding to make a cake, because why not, I pulled out all my pastel sprinkles for decorating.


I made a cherry chip cake with coconut buttercream and it was so yummy! It didn't last long since we took to having cake for breakfast for a couple of days. It's honestly not a bad way to start the day. Especially paired with a hot cup of coffee. 


I'm sure you'll see these sprinkles again since I have so much spring inspiration right now and want to bake everything I can!

Valentine Baking

As usual I did a bunch of holiday-themed baking in the first half of the month. It gives me an excuse to pull out my pink food colouring and heart sprinkles.

First up was pink chocolate chip cookies.


Next was heart sugar cookies with pink frosting and sprinkles.




Then I made a raspberry Jello poke cake when we had my parents visiting.


Finally, I whipped up some rice krispie treats the other day with some heart sprinkles on top. 


I have one more thing to bake this weekend but it actually won't be Valentine-themed...

Cake Goals

I love baking. I took cake decorating classes a few years ago and I'm always up for baking a batch of cookies or frosting some pretty cupcakes. It's one of my top passions in life.

This year I want to grow and challenge myself as a baker. I want to try new recipes and techniques. I want to experiment more with flavours and decorating styles. Lately I've found myself getting lost on Instagram and Pinterest looking at cake and cookie photos.

I want to go sprinkle crazy, try my hand at the new naked cake trend, and add all types of toppings to the tops of my cakes and cupcakes.

Cookies And A Starry Cake

Peanut butter cookies are a classic cookie that are super easy to make. Well, not always. I find sometimes the peanut butter is too wet or sticky and the cookies won't roll into balls or the cookies come out too crumbly. 

I've learned a trick - refrigerate the dough! Yes, this isn't some new sciencey-tip. A lot of cookie recipes call for chilling the dough. But the cookie recipe I follow on Kraft Peanut Butter containers does not say to chill the dough. I started doing it though. And it makes a huge difference!


The cookies roll into perfect balls and you can make the cute fork indents in the top. Honestly, try chilling your favourite peanut butter cookie dough and see if it makes a difference.


I shared some adorable cupcakes I made recently. Well, we had lots of leftover frosting. I decided to mix both of them together and it came out this amazing mint colour! To add to the adorableness of the cake, I topped it with some star sprinkles. I pretty much want to make this cake over and over again. It's too cute.

Easter Pinata Cake

March marked the second birthday for International Geek Girl Pen Pals Club and we celebrated all month with birthday-themed posts, looking back at the last two years, geek interest stats, and of course, with cake!

We decided to make a Pinata Cake for the bake-along this month using these instructions we found on Pinterest:


It seemed easy enough and it allows you to use any cake flavour, icing, and treats for the middle. The combinations are endless!

I made an Easter-inspired one. Because March was a whirlwind of a month, I ended up using a cake mix and canned frosting I had in the cupboard and picked up some Easter jelly beans at the store. The butter pecan cake, vanilla frosting, and jelly beans were a perfect combination and I love how it turned out.




I will be using this method again for other cakes. If you search 'pinata cake' on Pinterest you will find so many ideas for this style of cake and there are some that interest me a lot.

The other day I came across a couple of pinata cakes online that would be perfect for Easter.


Pinata cupcakes! I love this idea so much!!


I'm making another Easter treat later today that I'll be sure to share as long as it turns out.

What I'm Loving Now

I'm starting to feel an itch for Spring... stores at the mall are bringing out all their Spring stock - pastel coloured clothes, Easter decorations, patio sets. I'm feeling a strong urge for sunshine, going outside without a coat, and to garden (crazy, I know!).

Spring Treats

I've been finding myself pinning Spring-inspired desserts on Pinterest lately. Whether it's pretty pastel coloured desserts or light and fruity flavoured ones. When I saw this cake on there, my jaw dropped. It's gorgeous! The light pink and blue meringues are too sweet.


Jello

I recently picked up a bunch of Jello mixes because I've been craving it. Something sweet, but not too heavy. A few days ago I made cherry Jello with ginger ale (instead of the cold water it asks for) and it was SO good! I plan on making another batch with the ginger ale, but with a different flavour of Jello. Even though we rarely have pop in our house, I think I'll need to pick some up when it goes on sale to try other flavour combinations. 


Spring Dresses

How pretty is this dress?! It's a longer length, made of cotton, and the perfect colour. It's pretty much my dream dress for Spring.

Summertime

Summer is fast approaching and we've already had a few days that have felt like the middle of summer. The sun has been shining a lot lately and the heat is high in the afternoons.

With moving at the beginning of June to a new city, it is going to through my summer off... Initially I will be without friends at our new place but will be making trips back to Hamilton to visit family and friends. So I want to focus on having the best summer and fun adventures in both the new place and when I come back down to visit.

Red, Pink, and Hearts

It's hard to believe Valentine's Day is next week. It marks the half way point in February which just seems crazy. This year has been moving at a fast pace for me.

I will be busy next week at work because of Valentine's Day. But I plan on getting in some baking this week. Sugar cookies and cherry cupcakes are on my to-bake list. After drooling over some photos online, I'm also itching to make some doughnuts as well.

Homemade treats are definitely one of the best gifts that I can give Adam for Valentine's Day, which is perfect since the holidays always encourage me to bake! My love for baking and his sweet tooth are a perfect combination!

My Life in Photos

I feel old! I was not a fan of my birthday this year because I'm running out of birthdays that keep me in my twenties. Though, it was an awesome birthday. I didn't have to work and I was able to relax and was spoiled with delicious food. I spent a good chunk of my day crafting because apparently I just can't stop and I had a Gargoyles marathon while I sewed. I was then sent to the bedroom later in the afternoon because Adam was taking over the kitchen for my dinner and dessert. This was fun. I normally feel guilty spending too much time online but now I had time to do whatever I wanted. I caught up on podcasts, read tutorials, and fantasized about making huge online purchases. After a wonderful dinner, cake, and presents we spent the evening going for a long walk and then heading out to see The Amazing Spider-man.

The Amazing Spider-man was the perfect way to end my day because I loved it! I didn't have very high expectations going into the movie. The previous trilogy ruined Spider-man for me. I just didn't think it could be good. But I absolutely loved Andrew Garfield and Emma Stone in it. I'm excited to watch it again.

Birthday

How is your week going? Thankfully, my week is going by pretty quickly. This Friday is my birthday and I am looking forward to it. Being the manager at work, I was able to schedule myself off Friday and the rest of the weekend. I plan on celebrating my birthday for 3 days. Not really. But I'm looking forward to having a long weekend to relax, catch up on some TV shows, and go swimming. Plus I have 2 birthday dinners over the weekend and of course, I will get some gifts. I just need to get through tomorrow.






I don't know if it's because I actually have my birthday off this year, which hasn't happened in at least a few years, but I feel extra excited for my birthday. Or maybe it's because I spent last night with 2 great friends and received some early birthday gifts which were so awesome! It was a pre-birthday celebration which has me excited for the weekend!
