Fall Cookies

October is here and the weather is perfect! I'm back to wearing oversized sweaters, chunky knit socks, and drinking all the hot drinks my body can handle. I love this time of year.

This cool weather makes me want to bake. I have a huge list of things I want to try baking this month and I hope I have time to make most of them.

One thing I had an urge to make was fall-decorated sugar cookies. Now, I'm not a huge fan of sugar cookies. They are an absolute pain to make and they're just not my favourite cookie to eat. Adam, however, loves them and they are fun to decorate. So I usually make them once or twice a year. I had some fall sprinkles that I wanted to use so I made a batch of sugar cookies.


The icing and sprinkles were definitely the best part of these cookies. I almost didn't want to eat them because they looked so cute.


Sugar cookie dough works for me sometimes and other times it frustrates me. Because it worked so well this time, I might try my hand at another batch closer to Christmas. Plus, that means I can buy more sprinkles!

Holiday Baking

It's no surprise I love to bake and there's always a million different recipes I want to try at all times! So I figured since Christmas is just over a month away, I should start some Christmas baking and split all my batches in half. Half for the freezer (to feed to company), and half for our cookie container for lunch treats. 

Last week I made some easy refrigerator sprinkle cookies and peanut clusters. I was hoping the refrigerator cookies would taste similar to a sugar cookie but they're not quite the same. They're ok but next time I'll stick with an actual sugar cookie recipe. 



The peanut clusters turned out quite yummy though and I will definitely make them again. They're super easy to make too. 

You need:
1 2/3 cups chips - It recommends peanut butter or butterscotch. I used butterscotch and they're very good. However next time I might try semi-sweet chocolate chips.
1 tablespoon shortening
2 cups salted peanuts

That's it! You just mix the chips and shortening in a microwave safe bowl and microwave on high for 1 1/2 minutes. After it's been heated, stir the mixture until it's smooth. Then add peanuts, mix to cover peanuts and then drop onto either wax paper or into candy cups. 


I'm not sure what will be next up but I did stock up on baking ingredients today so I will have lots of choices!

One of A Kind Christmas Sugar Cookies

Sugar cookies are a major part of any Christmas celebration well, unless you’re me. However, my sister Anne is a great cook and baker! Anne decided instead of using the traditional sugar cookie recipe she would instead use a recipe from her favorite cook book, “The Pioneer Woman Cooks: Recipes from an Accidental Country Girl” by Ree Drummond. This particular recipe calls for powder sugar which gives the cookies plenty of sugar which means, no need for frosting!

Recipe Book

Angel Sugar Cookies
(Recipe can be found on Page 236)
Makes 18

Ingredients
2 whole Large Eggs
1 cup Canola Oil
2 sticks Butter, Softened
1 cup Sugar
1 cup Powdered Sugar
1 teaspoon Vanilla Extract
4 cups Plus 2 Tablespoons, All-purpose Flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Cream Of Tartar

Preparation Instructions

Preheat oven to 350 degrees F.
In a large mixing bowl, cream together eggs, oil, butter, sugars, and vanilla.

Add remaining ingredients and mix well.

Cover and refrigerate dough one hour.

Create balls of dough onto an ungreased cookie sheet.

Bake for 9 to 11 minutes, until cookies are just barely turning brown. Allow to cool before eating.

·         Cookies are thin so let them cool before handling!

Mom’s Easy Homemade Hot Cocoa Mix

Large Nestle Quick Powder (minus the marshmallows)
Large Powder Coffee Creamer (Original)
Large Bag of Powder Sugar
Large Box of Powder Milk
Add as much cinnamon and fresh nutmeg as you desire!
Simple mix in giant bowl and it’s done. Now you’re ready for hot water and whipped cream!
