Autumn Leaves Candy

A friend of mine makes the cutest little chocolates for the tops of her cupcakes out of a silicone mold and melted chocolate. So when I came across a leaf mold I knew I had to pick it up and try making my own little molded candies.

Pumpkin Spice and English Toffee Candy Melts

Silicone Mold
Directions:
1. Place mold on a baking sheet that will fit inside your refrigerator.
2. Pour approximately half of the bag of candy melts in a microwave safe bowl and follow the directions on the package to melt. I melted them in 20 second intervals on the defrost setting, stirring in between each interval.
3. Once melted, spoon into the mold. This proved to be messier than expected.
4. Using a toothpick make sure the melted candy is in all the crevices of the mold and to somewhat flatten out the candy melts.
5. Put tray in the refrigerator to let the candy harden. I left it overnight.
6. Pop out chocolates and enjoy!

I ended up with a few air bubbles but overall they turned out great.

I loved how these turned out, though I didn't expect them to be so messy. I'll definitely make more in other colours and flavours for upcoming baking projects.

Have you used silicone molds before?

Easter Treats

I follow a bunch of bakeries, baking supply companies, and other popular online bakers on Instagram. I love seeing pretty pictures of homemade treats because it gives me so much inspiration and makes me want to get in the kitchen and make something!

For the past couple of weeks my Instagram feed has been loaded up with pictures of Easter goodies, specifically treats made with Cadbury Mini Eggs. So I headed out and bought a whole bunch to make some things for Easter weekend.

First up was Mini Egg cookies.

I just used my favourite chocolate chip cookie recipe and replaced the chips with crushed Mini Eggs and added some blue sugar sprinkles to the tops before baking. It's an easy way to get a small taste of Mini Eggs at lunch time or with a coffee.

I knew I wanted to try my hand at another candy bark after making one back at Halloween. So I picked up some jelly beans to go with the Mini Eggs. I was planning on using melted chocolate chips but Michaels Craft Store had their Candy Melts on sale recently so I grabbed two packs - yellow and Colorburst Pastel.

Easter Candy Bark Directions:

1. Line a baking sheet with wax paper. Melt candy melts according to directions on the package.

2. Pour melted candy onto wax paper and swirl the two colours together.
3. Add candy and sprinkles to the mixture on the wax paper. Put in refrigerator.

4. Let harden for a couple of hours and then break into pieces.

I love how it looks and it's fun adding whatever candy you want to the bark. I'll be sure to make another bark soon since I have leftover Candy Melts. I'm already thinking about what candy and sprinkle combinations I can use.

Did you make any special treats for Easter weekend?
