Lime Chocolate Chip Cookies

Recently I shared some recipes that I wanted to try and one of them was Key Lime Cookies. Adam is a huge fan of lime so I figured I'd give these cookies a go. Well, the recipe calls for a Key Lime cake mix. In Canada, we do not have such a thing. Not that I've ever seen anyways because I would buy one in a heartbeat because of Adam's love of lime.


I ended up finding a Lemon Crackle cookie recipe in my Company's Coming cookbook. It's a basic recipe and I just switched out all the lemon ingredients for lime. I also added in some chocolate chips. They turned out pretty good but the lime flavour isn't super strong.



Don't get me wrong, they're very tasty with a harder outside and a soft inside. But I think we were both expecting a stronger lime taste. So now I need to get down to the U.S. to look for key lime cake mix!

    1. I prefer lemon, the husband prefers lime so I tend to mix and match random lemon and lime recipes for this reason.

  3. I've found the same thing when I used to cook - not much point these days when doing it only for myself, and in any case, my cooker is on the blink! However, I've sometimes found that if one uses the concentrated lime juice, rather than the natural, real thing, the flavour does come through a bit better. Why not give it a go? Good luck!
