Caramel Apple Oatmeal Cookies

I decided to try making an apple caramel cookie a couple of weeks ago. I thought it'd be a yummy combination. I ended up using my go-to oatmeal cookie recipe, threw in some apple chunks and drizzled caramel over the cookies once they cooled. They're a little sticky, but oh man, are they good! They've disappeared fast from our refrigerator.


Caramel Apple Oatmeal Cookies:
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup unsweetened applesauce
1/2 cup softened butter
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick or old-fashioned oats
1 cup chopped apple
caramel sauce
icing sugar

Directions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Combine flour, baking soda, and cinnamon in small bowl. Beat butter, applesauce, white and brown sugar, eggs, and vanilla extract in large bowl. Gradually beat in flour mixture.
3. Stir in oats and chopped apple. Drop by rounded tablespoon onto baking sheets.
4. Bake for 9 minutes. Remove to wire racks to cool.
5. Once cooled, mix caramel sauce and icing sugar to desired consistency and drizzle over cookies.



They are a seriously yummy cookie that I will definitely make again. If you want a less sticky cookie, omit the caramel drizzle. The apple chunks add enough flavour to these oatmeal cookies.
