Heart Mini Donuts

Inspiration hit recently to make some homemade donuts. I have a mini donut pan but I also had a cupboard full of cake mixes. So I did some searching on Pinterest and found a cake mix donut recipe

I chose a chocolate cake mix and because the mini donut pan requires such a small amount of batter, I also pulled out my mini cupcake pan, thinking they'd be like donut holes. 

So I clearly overfilled the donut pan and cupcake pan on the first two trays. The donuts ended up with a rounded top and the cupcakes are giant. For the rest of the batches I used a lot less batter and actually made some cute-looking mini donuts and cupcakes. 


Glazed Donuts

Donuts
1 box of Cake Mix
¾ cup buttermilk
2 eggs
2 Tbsp melted butter

Glaze
¼ cup milk
2 cups powdered sugar
1 tsp vanilla

Directions:1. Preheat oven to 425° and spray the donut pan lightly with cooking spray.
2. In mixing bowl, beat all ingredients on medium speed for 30 seconds.
3. Transfer batter in a ziplock bag and cut off the corner of the ziplock and squeeze batter into each donut mold, filling ⅔ full.
4. Bake for 7-9 minutes or until the tops are slightly browned and spring back when touched.
5. Let donuts cool in pan for 5 minutes and then turn pan upside down to remove.

Glaze:1. In medium saucepan combine ingredients with a whisk over low heat.
2. Stir until glaze is smooth.
3. Now coat your donuts with the glaze while burner is still on low. If the glaze gets too hot remove from heat.
4. Dip the donuts in with your fingers. The glaze shouldn't be hot enough to burn you.
5. Once the donut is coated, place on cooling rack or wax paper to cool and harden.
6. You can maybe dip two donuts before adding sprinkles. Any longer and the glaze will have hardened and you'll have sprinkle-less donuts!

  


After these little donuts were in the house for a couple of days, we both decided that these really did taste like cake donuts. The glaze kept them moist and added just enough sweetness.

I highly recommend giving this recipe a try! I know I'm going to try this recipe again and use a different cake mix. I may have a themed-donut idea in my head...
