Cake And Cookies

Back during the beginning of December, we were having company up so I did some baking. I had already started my Christmas baking and Adam had requested fruitcake cookies. So along with those, I wanted to make some other type of dessert. 

We had some leftover sour cream on hand so I decided on a sour cream coffee. I found a maple-cinnamon coffee cake recipe on Pinterest. And oh man, it was SO good! I highly, highly recommend using that recipe. But make sure you have some people around to help you eat it because I could have easily ate half the cake to myself.



Fruitcake cookies:

2 cups mixed glazed fruit
1 cup raisins (I actually used craisins)
1 cup chopped pecans
1 1/2 cup all-purpose flour
1/2 cup softened butter
1 cup granulated sugar
2 large eggs
1 tsp. vanilla
1/2 tsp. baking soda
1/4 tsp. ground cinnamon

1. Mix glazed fruit, raisins, and pecans in bowl with 1/2 cup of flour. Stir until fruit is coated.

2. Cream butter and sugar in separate large bowl. Add eggs one at a time and beat after each addition. Add vanilla. Beat.

3. Combine 1 cup of flour, baking soda, and cinnamon in small bowl. Add to butter mixture. Mix until no dry flour remains. Add fruit mixture and mix well.

4. Drop mixture with a tablespoon onto greased cookie sheets. Bake for 15-18 minutes at 325 F. Remove to wire racks to cool.



I'm not a fan of fruitcake. Adam and my Mom are big fans so I've made these a couple times now. They do taste like fruitcake. I can say that much and apparently they're very good according to my family. So if you're someone who likes fruitcake, then give these cookies a go!

I'm a little sad Christmas baking is over with but I'm already eyeing up Valentine's Day recipes...
