Strawberry Chocolate Chip Crisps

Years ago I was introduced to an amazing cook book, Cake Mix Magic 2. All the recipes use a cake mix in them and the recipes range from cookies to bars to fancier cakes. I've made quite a few recipes out of the book but by far my favourite is 'Lemon Crisps'. It's ridiculously simple and requires a lemon cake mix. Anytime I've made these cookies people don't believe me when I say they're made with a cake mix.

Anyways, I've made adjustments to this recipe to make other flavoured cookies. I've used a pineapple and a chocolate cake mix to make simple, yummy cookies. And then I tried a strawberry cake mix with cut up strawberries. This time I thought I'd use another strawberry cake mix but add in some chocolate since chocolate covered strawberries are delicious! They turned out so good and everyone who has tried them really likes them too.

Strawberry Chocolate Chip Cookies

Strawberry Chocolate Chip Crisps
1 box of strawberry cake mix
1 egg
1/2 cup of butter, melted (I used margarine)
1 cup of chocolate chips
Granulated sugar

Heat oven to 350 degrees.

In a large mixer bowl, combine cake mix, egg, and melted butter. Mix with wooden spoon until well blended. Add in chocolate chips and mix well.

Shape dough into 1 inch balls. Roll in granulated sugar. Place on greased baking sheets 2 inches apart.  Press flat with bottom of a glass dipped in sugar.
Bake 10-12 minutes or until lightly browned.  Cool for 1 minute on baking sheet or until firm.  Remove from cookie sheet to wire rack.  Cool completely.

Strawberry Chocolate Chip Cookies

If you want to try this recipe with the lemon cake mix, just substitute the cake mix and add in some lemon juice and zest (zest is optional) instead of chocolate chips. I promise you won't be disappointed!
