Easy Cake Mix Cookies

Do you ever wake up and want homemade cookies? Or get a craving for something sweet in the evening when you child has finally gone to bed? Then you look in the pantry and refrigerator and come up empty-handed? Well, if you have a box of cake mix in the back of the pantry, you can probably whip up some homemade cookies in about 20 minutes.



I have been making these cookies for years and I've used pretty much every flavour of cake mix available. You can also leave them plain, roll them in sugar, top them with sprinkles, or throw in some chocolate chips. They are also the perfect chewy cookie!

A couple of days ago I decided to make some of these cookies. I had a lemon cake mix on hand, so I added some lemon juice to make them extra flavourful.

Lemon Cake Mix Cookies

  • 1 box lemon cake mix
  • 1 egg
  • 1/2 cup butter, melted
  • 1 teaspoon lemon juice
  • 1/2 cup white sugar
Directions-

Heat over to 350 degrees Fahrenheit. Grease baking sheet or line with parchment paper.

Mix cake mix, egg, melted butter, and lemon juice in a bowl. 

Using a tablespoon, scoop out cookie dough and roll into a ball. Roll ball in white sugar and place on cookie sheet.

Using the bottom of a cup, or you hand, flatten cookies on baking sheet.


Bake for 10-12 minutes. Cool for 1 minute on baking sheet, or until firm. Transfer cookies to cooling rack to cool completely.


I swear you'll be addicted to these cookies. You wouldn't know they were made with a cake mix.
