Banana Pumpkin Pancakes

Have you ever had banana pancakes? A few friends kept making them and posting them on their Instagram so I finally asked for the recipe and it seems everyone makes them slightly different. Most people try to avoid adding too many grains to them or they try to make them Keto-friendly. But I wasn't necessarily interested in these pancakes to avoid too many carbs, but for something different for breakfast. Especially because at this point Emma was eating finger foods and I thought she'd like these.

So I've been experimenting with the recipe over the last year and I've finally found what works for us. To avoid too many carbs, a lot of people keep them pretty runny and soft. But I wanted a proper pancake I could flip without it falling apart. 

This is what I ended up with:

Banana Pancakes

  • 1 ripe banana 
  • 1 egg
  • 1/4 cup oats
  • 1/4 cup flour
  • 1 teaspoon cinnamon
Directions - 

Mash banana in a large bowl and then add remaining ingredients. Mix well. 

Pour out pancake batter in small circles (think 2-3" across) in a preheated pan. Flip to lightly brown both sides. Pancakes will feel soft in center (this is due to the banana). 

It makes approximately 6 small pancakes so it's a perfect recipe for Emma and myself. If Adam is home, I double the batch to feed the three of us.

The pancakes taste like little banana bread bites. I don't typically pour maple syrup on Emma's because they're sweet enough with the ripe banana. 

Last week, however, I had some pumpkin puree on hand so I decided to change up my normal banana pancake recipe. 

Banana Pumpkin Pancakes

  • 1 ripe banana
  • 1 egg
  • 1 heaping tablespoon pumpkin puree
  • 1/4 cup oats
  • 1/4 cup flour 
  • 1 teaspoon pumpkin pie spice
I followed the same directions and they turned out great! They had a nice pumpkin taste to them and they looked a little orange. Emma and I both enjoyed them. The next time I have some pumpkin puree open I'll be making these again.
