National S'mores Day

 

Today is National S'mores Day and it's no secret I'm a big fan of s'mores and anything with marshmallows. There's so many s'mores recipes online and I want to try them all. When I was brainstorming which recipe to make, I came across a recipe on Pinterest that was perfect - I already had the ingredients and it was easy to cut up and take to work for lunches.

So this recipe is basically rice krispie treats but made with honey graham cereal (Golden Grahams or a knock-off brand) and chocolate chips. The recipe I followed also added in peanut butter since peanut butter s'mores are pretty amazing. But if you wanted more of a classic recipe, omit the peanut butter for butter.

Peanut Butter S'mores
3 tablespoons butter
3/4 cup peanut butter
6 cups marshmallows
6 cups honey graham cereal (Golden Grahams)
chocolate chips (as much as you like)


Directions:
1. In a large pot melt the butter and peanut butter over medium heat. Stir in marshmallows and continue to stir until melted.
2. Remove from heat and add in cereal and chocolate chips. Stir mixture well, coating the cereal with the melted peanut butter/marshmallow mix.
3. Press mixture into a greased 9x13 pan. Top with more chocolate chips. Let cool and then cut into pieces!


These turned out super yummy. The peanut butter flavour is strong but I have no problem with this. I pretty much want to eat the entire pan but I think Adam would be a little upset if I did.
