I had an urge to make some cupcakes recently. Now, I have tons of cupcake recipe books and magazines. I have favourites though. One of them is a small special edition Betty Crocker magazine that has cupcake recipes that you use a Betty Crocker cake mix for the base.
Since Adam's a big fan of everything lime, and I knew we had tequila on hand, I settled on the Margarita Cupcakes. This is the exact recipe here. Though, I did make a few alterations to the recipe.
Margarita Cupcakes
Ingredients:

- box Betty Crocker SuperMoist lemon cake mix
- 1/2
- cup water
- 1/2
- cup unsweetened applesauce
- 1/2
- cup gold tequila
- 3
- eggs
- 1
- box lime-flavored gelatin
I then followed the directions for the cupcakes in the recipe. The cupcakes were a neon green inside after baking them which I thought was so fun. I'm going to try making cupcakes with other flavours of gelatin in the future. I loved the flavour and the colour they turned inside.
I didn't follow the frosting recipe that was given. I made my own buttercream with butter, icing sugar, lime juice, food colouring, and water.
The cupcakes were so good and I highly recommend this recipe. I'm interested in trying it with some other flavour combinations and maybe switching up the alcohol or omitting it altogether.
