Confetti Cake Batter Cookies

This week is pretty busy for me... between work, Easter plans, and a One of a Kind show date, I don't have much free time. But I felt like I had to make some sort of Easter cookie for Adam. I remembered seeing a recipe on Pinterest for a cake batter cookie which is always a quick cookie to make.

I'm not new to cake batter cookies. There's one recipe I use over and over again and I love how they turn out. So for my Easter cookies, I choose a confetti cake mix and then added in sprinkles so the cookies are filled with colourful little bits.

I followed this recipe with a few exceptions.

1 box confetti cake mix
1 teaspoon baking powder
2 eggs
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla extract
1 cup sprinkles


Heat oven to 350 degrees.

Mix cake mix and baking powder in a large bowl. In a smaller bowl, whisk together eggs, applesauce and vanilla. Add the egg mixture to the cake mixture and stir to form dough. Add sprinkles and mix. Sprinkles can dye the cookie dough so don't over stir.

Drop dough onto greased baking sheets using a teaspoon. 

Bake for 9 minutes. Transfer cookies to wire racks and cool completely.

The cookies turned out so soft and fluffy! And the cake batter taste is incredibly yummy!

I also made up some mint cupcakes a couple of weeks ago. Adam had requested just mint, not chocolate mint. So I used a white cake mix as the base and added lots of peppermint extract! I did add some chocolate chips to a handful of the cupcakes to add a bit of a chocolate taste to some of them. And then I topped the cupcakes with some super yummy mint buttercream that I made from scratch!

I used the same sprinkles on these cupcakes that I used in the cookies. So I'm just going to pretend these cupcakes were an early Easter treat....

I have a couple of baking recipes I want to try out within the next 2 weeks with some leftover Easter candy. I plan on stocking up on discounted candy!

    1. I found a recipe on Pinterest for cookie dough that has no eggs in it so you can eat it raw!
