Pumpkin Oatmeal Cookies with Chocolate Chips

A couple of weeks ago I made some Pumpkin Oatmeal Cookies with Chocolate Chips. I had found the recipe via Pinterest.



I changed the recipe slightly - I used unsweetened applesauce instead of butter and I omitted the almonds and toffee bits. They turned out really good. They're soft and chewy and the pumpkin flavour is very evident in these cookies, unlike others I have tried. You can find the recipe here.

During the last week of October I was able to squeeze in a couple of Halloween-themed treats. Last year, my Dad bought me a Halloween Wilton cookie mold sheet. They turned out so well when I made them last year, so I made 2 batches this year. They don't even need icing or sprinkles. They're a really tasty sugar/shortbread cookie.

I also made Halloween-themed cupcakes for a family member's birthday lunch. I made chocolate fudge cupcakes so the cake part looks almost black.

I have one more Halloween-themed treat to bake this week with some leftover Halloween candy. I hope it turns out!
