A couple of weeks ago I made Oatmeal Toffee bars. I was so excited to cut into these bars. When they came out of the oven the toffee looked so gooey and yummy on top. Surprisingly, they are not overly sweet. They are perfect with a tea or coffee.
Oatmeal Toffee Bars
1 cup softened butter or margarine (I used 1/2 cup unsweetened applesauce and 1/2 cup margarine)
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 1/3 cups toffee bits (I used Skor bits)
3 cups quick-cooking oats
Heat oven to 350 degrees.
Beat butter and brown sugar in large bowl until well blended. Add eggs and vanilla and beat well. Stir flour, baking soda, and cinnamon together in a separate bowl. Gradually add to butter mixture, beating until well blended. Set aside 1/4 cup toffee bits and stir remaining toffee bits and oats into batter.
Spread batter into greased 13 x 9 baking pan. Sprinkle remaining 1/4 cup of toffee bits over the top of the batter.
Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.
These were super easy to make and really good! I definitely recommend giving these a try!

Yum, these look so good! I just took some oatmeal cookies out of the oven. :D
