I know, Halloween was over a week ago but I finally got around to uploading my pictures... I had the day off so I ended up baking Halloween sugar cookies and cupcakes. My dad actually bought me one of those Wilton cookie mold pans. I have never used one like that before and I was scared the cookies would stick but they popped out so easily! I also used the sugar cookie recipe they had printed on the packaging and they are definitely tasty!
I made the chocolate cupcakes from scratch and it was my first time using my Kitchenaid mixer for cake batter. It really made a difference - the cupcakes were definitely lighter and more airy than before. I find every time I make a cake or cupcakes from scratch they end up heavy but beating it longer seemed to help with that problem. I then whipped up some pumpkin cream cheese frosting for the top and had fun with some leftover candy and orange frosting I had.
The rest of the day was spent at my parents'. I helped hand out candy with my mom and got to visit with my niece on her first ever Halloween! She was such an adorable Tigger. She also got a new pair of pajamas and hat that night from Mary which ended up being her second costume for bedtime hehe...
Overall it was a great Halloween and I was happy to spend the whole day relaxing. But now it's Christmas time! I'm already way into the Christmas spirit and I'm so excited!

I know how it is to be late with uploading pics! Those cookies look yummy. And I love my KitchenAid mixer...Your cupcakes look great, but that pumpkin cream cheese frosting sounds especially good.
ReplyDeleteYour niece makes one of the cutest tiggers, and the PJs are way cute!
